Buffalo Cauliflower Baked Mac and Cheese
Ingredients:
- 7 tbsp unsalted butter
- Kosher salt
- 1 cauliflower, cut into big pieces
- 2 stalks celery, finely chopped
- 1 pound elbow macaroni
- 2 cloves garlic, minced
- 1 small onion, finely chopped
- A quarter cup of hot sauce
- 2 tsp all-purpose flour
- 2 ts dry mustard
- 2 1/2 cups half-and-half
- Cheddar cheese (1 pound),You can cut this into 1/2-inch cubes.
- 8 ounces shredded cheese
- 2/3 cup sour cream
- 1 cup panko
- 1/2 cup crumbled blue cheese
- 2 tbsp chopped fresh parsley
Method:
- Preheat your oven to 350° Fahrenheit and butter a 13-by-9-inch baking dish.
- Fill a large mixing bowl with ice water and start a large saucepan of salted water boiling. Cook the cauliflower for 5 minutes, or until it is just soft. Remove the cauliflower with a slotted spoon or spider and immediately plunge it in ice water to cool thoroughly before draining. Return the salted water to a boil and cook the pasta for 7 minutes, or until soft. Drain the excess water.
- In a large container melt some butter. Cook for 5 minutes, or until the celery and onion have softened. Cook for 2 minutes after adding the blanched cauliflower and garlic, then add 1/2 cup hot sauce and continue to cook for 1 minute until slightly thickened.
- In a medium-sized saucepan, add 2 tablespoons of butter and melt it. Combine the flour and mustard in a mixing bowl and whisk together until smooth. Whisk in the half-and-half, then mix in the remaining 1/4 cup hot sauce for 2 minutes, or until thickened. Whisk in the Cheddar and pepper jack cheeses until smooth, then whisk in the sour cream.
- Pour roughly half of the cheese sauce over half of the macaroni into the prepared baking dish. Top with the remaining macaroni and the cauliflower mixture. Pour the remaining cheese sauce over the top in an equal layer.
- In a medium microwave-safe bowl, heat the remaining 2 tablespoons of butter for about 30 seconds. Combine the panko, blue cheese, and parsley in a mixing bowl. Drizzle it over the macaroni and bake for 30 to 40 minutes, or until bubbling. Allow it cool for 10 minutes before serving with more hot sauce on the side.

Bacon, Egg and Cheese Breakfast Burgers
Ingredients:
- 1.5 pounds ground beef
- Kosher salt and freshly ground black pepper
- 8 slices bacon
- 4 slices Cheddar or American cheese
- 4 soft hamburger buns, split
- 4 tbsp unsalted butter, melted
- 4 large eggs
- 1/3 cup spicy ketchup
Method:
- Preheat the oven to 350 degrees Fahrenheit.
- Make 4 patties out of the beef, each about 5 inches in diameter. Season the patties on the outside with pepper and salt and set them on the side.
- Cook the bacon in a large nonstick pan over low heat, about 4 min per side, until brown and crispy. Drain it. Increase the heat to medium-high and pour out all but about 1 tbsp of the bacon drippings.
- Cook the burgers in the skillet for 4 minutes per side, or until thoroughly browned on the exterior and medium-rare on the inside. Place the cooked burgers on a rimmed baking sheet with a slice of cheese on top of each. Apply butter on the bun, greased side up on a second baking sheet. Bake for 3 minutes or until the cheese melts and the buns are gently browned for about 10 minutes.
- Wipe the skillet clean in the meantime. 1 tbsp of saved bacon drippings, heated over medium-high heat. Break the eggs into the skillet and cook for 5 minutes, or until the whites are set but the yolks are still runny. Salt & pepper to taste.
- Top each of the bottom buns with a burger patty, two pieces of bacon, and a fried egg. Spread some spicy ketchup on the top bun and place it on top of the burger.
